Guido's Hard Italian Cheese

Guido's Hard Italian Cheese is a quick table cheese that only takes 3 to 4 weeks to mature.

Now imagine my surprise when I received an email from Margot, Guido's wife! Here is part of the email (with permission).

"Hello Gavin,
What a hoot to see a professional making Guido's cheese and satisfying that you like it too. We'll be interested in what you think after it's aged a bit.
It brings back many memories of over 20 years ago when Guido first started making his own cheese and we had to travel many miles into Lancaster County to find an Amish farmer who would sell us raw milk. (It has since been legalized for sale.)
Also got a kick out of one of the comments on the video re: the name Guido being an ethnic slur. Oh boy.
