Goat's Milk Cheddar Taste Test

Goat's milk Cheddar. I didn't know what to expect when I made this cheese, but I was certainly pleased when I tried it for the first time. Crumbly, but creamy at the same time, with only a hint of tanginess that one normally gets with a goat's milk cheese. It wasn't an overbearing Goat's cheese like Chevre (goat's milk cream cheese) which is sharp, acidic and tangy. It was more subtle like a mild cow's milk cheddar but with an additional delightful flavour.

Anyway, I could have waffled all day about this cheese, but you must taste it to believe it!
