G'day Curd Nerds. Thanks for joining me this week!

This week's cheese is from Spain: Hispánico. Closely related to Manchego, this cow's milk cheese is an intermediate-level cheese well worth making. More below.

Hispánico Style Cheese

Originating from España, Hispánico is a cow's milk version of the very popular ewe's milk cheese, Manchego.
|
I used smoked paprika and olive oil as a rub to add colour to the rind and possibly some flavour. Once the cheese is mature in 6-8 weeks, I will be wiping off the rub so it has a clean rind.
|
Even though I used a specialised basket for this cheese, it would be okay to use any cheese basket from 140mm to 165mm in diameter. A big shoutout goes to Tracey Johnson of Cheese Needs for gifting me the basket used in the video.
