G'day Curd Nerds. This week's cheese is Ibores, a Spanish goat milk cheese rubbed with smoked paprika and olive oil. It reminds me of the texture of Feta but without the big salty hit. It crumbles well, doesn't melt, and is perfect on salads or sliced for sandwiches and proudly served on your next cheese platter.

Ibores is a cheese that I've wanted to make for quite a while, but never had a reliable source of goat's milk. I recently found a good source from Caldermeade Farm, Victoria that sets a solid curd and is delightful to work with in cheese making.
|
So with goat's milk in hand, I treated it with respect during the process as pasteurised goat's milk usually has a fragile curd set. I cut the curds to size in steps, starting with large columns, then smaller cubes, and then even smaller cubes; all to prevent fracturing. It's worked like a charm and the entire process was easy to complete.

I would class this as a beginner cheese because it only takes 4 to 6 weeks to mature and the smoked paprika rub keeps the mould at bay and allows the cheese to lose some moisture during aging with a natural rind.

I included a taste test at the end of the video for you to see my reaction and commentary on the final product. Let me say that it is a huge hit with family and friends! It has a great mouth feel and mild flavour without being too goaty. Definitely worth making if you can get goat's milk in your area.
