Curd Nerd News Edition #34
G'day Curd Nerds. Thanks for joining me this week!
Kim and I visited Long Paddock Cheese for my 60th birthday a few months ago and were given a tour of the facilities. We were both overwhelmed by the willingness to share information and the kindness shown by all the staff. We even got to sample some of their delicious cheeses. More about our visit below in the video.

I Visited a Cheese Factory For My Birthday!
Long Paddock Cheese
In late May 2024, Kim and I travelled to Castlemaine, Victoria to visit the friendly staff at Long Paddock Cheese. I was invited by fellow curd nerd Dominique who works there. It was my first visit to a commercial cheese-making factory so I was very excited!
After meeting the staff, we were given a comprehensive tour by Gaetan Chapon, the General Manager. He was very knowledgeable about all aspects of the operation. Watch the video for the full tour!
Long Paddock Cheese is a small-scale Australian artisan cheesemaker, based in Castlemaine, headed by French/Australian cheese guru, Ivan Larcher. They make & mature a range of soft & semi-hard cheeses & fresh dairy products. Their products are made with French flair and skill but have an Australian identity.
They sell through our on-site shop, at farmers' markets, and their online cheese club, via direct wholesale and interstate through distributors.
Attached to Long Paddock Cheese is their dedicated training facility, The Cheese School, where their cheesemakers teach professionals and beginners the science, art and secrets of great cheesemaking.
After the tour, we were escorted back to the staff room to sample some of the cheeses made at the facility. This was amazing and so were the cheeses!
I was invited back to assist with making cheese a few days after our initial tour, but that's a story for another newsletter and video!
