Curd Nerd News Edition #35

G'day Curd Nerds. Thanks for joining me this week!

I was invited back to Long Paddock Cheese to assist in producing one of their blue cheeses, Bluestone. It is made in the Fourme d'Ambert style. Watch the video below!

Making Bluestone at Long Paddock Cheese

I was invited back to Long Paddock Cheese a week after our initial factory tour to assist in making a few of the cheeses they had under production that day.

I assisted Dominique in making Bluestone, their French-style blue cheese and Silver Wattle which is their lactic set soft cheese similar to Saint-Marcellin.

Anyway, this video is just the work we did on the Bluestone. I got to sample the finished cheese and it has an ivory-coloured paste with marbled blue veins and a delicate, slightly chalky, soft texture.

I thought it was a balanced meld of creamy/buttery flavours, some fruitiness and a little saltiness. Its blue mould delivers subtle spikes of flavour as it is eaten. It exhibits delicious complexity & length of flavour as the paste melts in the mouth.

It is made in a small barrel-shaped Truckle or Fourme, with an average of 1.2 kg (2lb 10oz). It is aged for a minimum of 45 days. You can learn more about Bluestone at the Long Paddock cheese website.

Don't forget to watch the video!

New Merch!

I've published a new product this week on the merch store which is this retro design on mugs, and T-shirts with my catchphrase "G'day Curd Nerds".

All my merch products are manufactured, fulfilled, and shipped from Australia, USA, EU, or Canada! With that global coverage, you no longer have to wait for a long time for your merch to arrive. It's a massive win-win for everyone!
