G'day Curd Nerds. Thanks for joining me this week!

A while back, I was given a new recipe for a Fundy Fog, which was inspired by Humbolt Fog, a popular cheese in the USA. It is this weeks feature video.

Fundy Fog

Patricia Gauci, a long-time supporter of my work, gave me this cheese recipe. She created a cow's milk version of the very popular goat's milk cheese, Humbolt Fog, originally from California, USA.

It is similar to Camembert but with ash as a centre line and a coating of the entire cheese.

Fundy Fog Ingredients
  • 8 L / 2 Gal Unhomogenised/Pasteurised Cows Milk
  • 1/4 tsp Flora Danica Aromatic Mesophilic culture
  • 1/8 tsp Penicillium Candidum
  • 1/32 tsp Geotrichum Candidum
  • 1/16 tsp Lipase (Kid if possible) diluted in 1/4 cup water
  • 1/4 tsp (1.25 ml) Calcium Chloride diluted in 1/4 cup non-chlorinated water
  • 3/8 tsp (2 ml) Single Strength Liquid Rennet diluted in 1/4 cup non-chlorinated water (IMCU 200)
  • 1 tsp non-iodized salt per cheese
  • Cheese ash (activated charcoal)
Process
Follow the video instructions

Extra notes
Rubs/Coatings: 2 Tbs vegetable ash (activated charcoal) combined with 1½ tsp cheese salt, plus extra ash for the middle layer.
Affinage: 10°C @ 90% R.H. until white mould growth is even (2-3 weeks); then wrapped with microperforated cheese wrap @ 10°C until ready to eat, 60 days total.
