G'day Curd Nerds. I have a real treat for you this week. I created a new cheese called Triple Pepper Snack which is my stabilized version of Quick Mozzarella with 3 kinds of heat!

|
Triple Pepper Snack is the perfect snacking cheese to impress your family and friends. It's certainly one of my favourites right now as I've made it 3 times without issues.
|
When you're desperate to serve up some of your cheese and none is mature, this can be made in under 1 hour and with only a few ingredients.
|
The basis of this recipe is Quick Mozzarella, which is sometimes difficult to master. However, with the addition of yoghurt to provide some thermophilic culture to the mix, it becomes easier to stretch and is stabilized during refrigeration. Normally, Quick Mozzarella should be eaten within a few hours, but this cheese holds its shape and can be stored in the fridge for up to 7 days.

Many of you have asked for a video that shows a behind-the-scenes look at our backyard studio we built in July 2020. Well, after much editing, yesterday I released the video "Our Backyard Studio Build and Full Tour".

Included in the video is the complete build and an outside and inside look at our workspace. I even provided detailed information about my Livestream setup and equipment with which I produce the weekly "Ask the Cheeseman" Q&A live show on Sunday mornings. Many have watched the build video already and the feedback is very positive!

Next week - Handkäse

Handkäse is a small, translucent, yellow cheese with a pungent aroma that some people may find unpleasant. It is flat and round in shape.
|
Often served as an appetizer or as a snack with Apfelwein (Ebbelwoi or cider), Handkäse is traditionally topped with chopped or sliced onions, locally known as "Handkäse mit Musik" (literally: hand cheese with music). It is usually eaten with caraway on it; in many areas, it is served on the side. More on this cheese next week!
