Flora Danica is used in producing a variety of cheeses including Havarti, Baby Swiss, Gouda, Edam, Blue, Camembert, Brie, Goat’s Milk Cheese (Chevre), buttermilk/sour cream, cream cheese, cottage cheese, Crème Fraiche, cultured butter and other fresh cheeses. Also known as Aromatic Mesophilic culture.
Flora Danica by CHR has strains which include;
- (LL) Lactococcus lactis subsp. lactis,
- (LLC) Lactococcus lactis subsp. cremoris,
- (LLD) Lactococcus lactis subsp. lactis biovar diacetylactis,
- (LMC) Leuconostoc mesenteroides subsp. cremoris.
Freeze-dried direct set/DVI-Direct Vat Inoculation.
Pack sizes suitable for 100 and 500 L milk. Store in freezer for prolonged life.
