G'day Curd Nerds. This week we take the Handkäse we made last time and serve it as the Germans in Hesse would!

Handkäse is a unique little cheese that is served in pubs or restaurants in this manner with a raw onion and caraway seed marinade to soften the cheese. It is usually served on rye bread and accompanied with apple wine or dry cider.

I loved the way the marinade added much-needed flavour to this stinky little cheese. I suppose it is an acquired taste, but I did like it regardless of the odour!

Caution! There is a fart joke in this video, so if easily offended, then probably best to skip it!

Did You Know?

Salt is an essential ingredient in cheese making. Not only does it add flavour to the cheese, it helps to dry the curds during draining by controlling whey expulsion and causing the curds to shrink. However, the primary reason for salting cheese is to retard or halt the bacteria cultures continuing to convert lactose (milk sugar) into lactic acid.

It will help to kill harmful bacteria and other fungi growth when used as a brine for salting after pressing or as a simple wash during maturation.

Salting is also essential in the development of a natural rind.
