Gbejniet tal-bzar

G'day Curd Nerds. Welcome to the sixth curd nerd newsletter. This week's free video tutorial is about that unique Maltese cheese; Gbejniet tal-bzar.

I was first introduced to this cheese many years ago by Connie, a friend of Maltese descent, who told me that I just had to try this traditional dairy cheese from her homeland. Well, my first impression was that it had an overpowering vinegar flavour, which soon died away to reveal this tasty little diary snack. Now, just be aware, she served me plain Gbejneit, which I've since found out to be one of the few variants of this cheese. The type I chose to make was a fresh, pepper-coated cheese.

The ingredients were simple enough to source, after all, I do own a cheese-making supply store. However, one item that did elude me, was the Qwieleb, a small basket that the curds formed within. Thankfully, Australia has a vibrant Maltese community with a few cultural food stores that do stock these cute little baskets. I even managed to get some wholesale to sell in our store!

Another issue was the lack of a recipe. Enter, Charlie; a local resident and customer of ours who was also of Maltese descent. He offered me his tried and true Gbejniet tal-bzar recipe that he had been making for many years. It was a hit with his family and friends, so I gave it a try.

The result is shown in the video tutorial, but suffice it to say that it was delicious and peppery! Well worth the time it took to make this cheese. I've since had emails from the curd nerd community that they've also made Gbejniet tal-bzar using my video and shared the cheese with their Maltese friends and family and they swear it was just like nanna used to make!

So give this delicious little cheese a go, you won't regret it.
