G'day Curd Nerds. This week I have an amazingly simple, yet delicious cheese for you, a video tutorial on how to make Yesterdaze cheese.

Yesterdaze Cheese

Yesterdaze cheese was created by Tracey Johnson who owns and runs Cheeseneeds.com in Prince George, BC, Canada! Tracey permitted me to use her recipe to showcase this amazing and simple cheese that can be eaten the next day and tastes like cheese without an extended maturation period.

Tracey said, "I am often asked which cheese should I start with? What is beginner-friendly and reliable? I started thinking about the farmer's cheeses made in the small crofts of Scotland, out of necessity they had to be low maintenance and ready to eat or trade fast. I have been experimenting with this recipe and here it is. A cheese you do not have to do a lot of babysitting with and can eat on day 2, that tastes like cheese."

And indeed it does. Upon further advice from Tracey, I matured mine in a ripening box in the kitchen fridge until day 4 for a slightly stronger flavour, and as you will see in the video, it was well worth these few days of waiting.

I was very impressed with the simplicity and flavour of this cheese and would highly recommend it to anyone interested in making cheese who has not yet made the leap of faith to begin. Just do it!

It is well worth the time you will put into it. It's now a family favourite here!
