G'day Curd Nerds. This week I have two video tutorials for you. An Egyptian cheese called Domiati and a French cheese spread made from leftover cheese called Fromage Forte.

Fromage Forte

Fromage Forte is a cheese spread made from leftover cheese, salt, pepper, dry white wine, and garlic. It literally translates from French as "Strong Cheese". I recommend that you use 3 different types of cheese when making this spread and the older the cheese, the better!

It doesn't take very long to make and all you need is a food processor. It's now a family favourite here on toast for breakfast or supper.

Domiati

Domiati is typically made from buffalo milk, cow milk, or a mixture, it can also be made from other milk, such as sheep, goat or camel milk. It is the most common Egyptian cheese.

Unlike feta and other white cheeses, salt is added directly to the milk, before rennet is added. It is named after the Mediterranean seaport city of Damietta.

I would have to say that this is one of the sweetest, creamiest and saltiest fresh cheeses that I've ever made and tasted. It was delightful.

Also, Domiati stores for over 6 months in brine in the kitchen fridge. No special cheese fridge is required.

Fromage blanc translates from French as "White cheese". It is similar in consistency to yoghurt, but doesn't taste the same and the process is different. Delicious none the less. More on Fromage blanc next week...
