Cotschilli

G'day Curd Nerds. Welcome to the 10th Curd Nerd newsletter.

This week's free video tutorial is Cotschilli which is an enhanced Cotswold or Ploughmans Cheese that uses an altered Double Gloucester recipe with the addition of dried onions, dried chives, garlic powder, and dried chilli flakes.

I first made a variation of Cotswold many years ago, as requested by Kim. I liked it, but I didn't love it. Then I made another variation whereby I added garlic powder. That made Cotswold so much better, but I wanted to see if I could improve it further, hence the dried chilli flakes.

This visually appealing version, which I've named Cotschill, won't be ready to eat until the end of September 2023, but I believe it will be a winner! Watch for the taste test in upcoming editions of the newsletter. Fingers crossed.

Also, during the last two weeks, I've planned out the remaining cheese-making videos for 2023. I hope to release at least 16 cheese-making video tutorials in the next 4 months, one a week until New Year's.

I have the plan, I have the knowledge, and I have the determination to see it through. There may be the odd taste test thrown in for good measure!
