G'day Curd Nerds. This week we have a right little stinker of German origin. Handkäse is the cheese featured in this week's newsletter!

Handkäse

Handkäse is a small, translucent, yellow cheese with a pungent aroma that some people may find unpleasant. It is round in shape and was originally formed by hand hence the translated name of Hand Cheese. Nowadays, it is made using commercial machinery and resembles a hockey puck.

It is a specialty cheese from the southern part of the State of Hesse in Germany and is served in bars and restaurants in many cities and towns in this region.

Often served as an appetizer or as a snack with Apfelwein (Ebbelwoi or cider), Handkäse is traditionally topped with chopped or sliced onions, locally known as "Handkäse mit Musik" (literally: hand cheese with music). It is usually eaten with caraway on it; in many areas, it is served on the side.

This cheese certainly had an acquired flavour when eaten alone, however with the addition of the onion marinade softens the cheese and the combination of flavours is delightful.

It is originally from California, USA and is quite a unique cheese as it uses no press to form the cheese and it has a belly button! It will be matured over the next 3 to 6 months.
