Good for developing milder blue cheeses and is also good for making white mould cheese like Brie or Camembert.
This is a micro-perforated wrap which allows your cheese to breathe over the 6-10 weeks of maturation. This allows the blue mould to infuse throughout the cheese during this time. The dull side of the paper will absorb any excess moisture (so should be the side touching the cheese) while the shiny side with holes protects the cheese from drying out while still allowing it to breathe and develop flavour and aroma.
Includes adhesive labels to keep your cheese sealed, with space to write on so you can identify and monitor your cheese easily.
