Forget that store-bought rubbish.  This quick mozzarella is the real deal and tastes good to boot!

Once you have tasted freshly made mozzarella, you will never buy that yellow grated cheese that they try to pass off as mozzarella ever again.

Quick Mozzarella is as its name implies, quick to make, and recommended to be eaten fresh or within a couple of days.  We like it best when it is one day old as we find that the lipase intensifies the flavour of this cheese after 24 hours.

Our favourite use is sliced onto sourdough bread, topped with sliced heirloom tomatoes and a couple of basil leaves or a squirt of basil pesto.  It is a real flavour explosion!

Anyway, enough about how it tastes, how do you make it?

Well, it is so simple to make that it is criminal.  In fact, it is probably better to show you how via one of our video tutorials.

We have included the recipe and step by step instructions on how to make this simple cheese.  We use a microwave oven to speed up the process, helping us to make about 500 gm of cheese in around 30 minutes!
